COFFEE RUBBED PRIME RIB ROAST
We use our high-grown, fair trade coffee.The coffee forms a herbacious base that intensifies the beef flavor. NO, you don’t taste the cofffee. YES, we sell these delicious, gourmet ingredients.

Ingredients:
6 lb Boneless Prime Rib Roast
2 Tbsp. O&CO Madagascar Peppercorns
2 Tbsp. Life O’Licious Gourmet coffee beans
1 Tbsp. O&CO Portugese Sea Salt
2 tsp. brown sugar
2 tsp. O&CO Extra Virgin Olive Oil
1 Tbsp. crushed garlic

Preheat oven to 450 degrees
In spice mill/coffee grinder add peppercorns and coffee beans. Grind fine. In a separate bowl add brown sugar, sea salt, olive oil, and garlic and mix well, add ground pepper coffee mixture and mix well. In a shallow roasting pan rub mixture into roast, pressing in to stick. Rub all sides of roast.

Roasting times:
450 degrees for 15 minutes (do not open oven dooor) turn down heat to 325 degrees. Roast 2 hours or until desired doneness.
135-140 internal degrees for med. rare, 150 for med.,
155-160 for med. to med.-well-done. Let stand loosely covered out of oven for 15-20 minutes before slicing to keep juices in the roast.
